Bell Pepper

Instructions
Peel Eggplant, chop, than press out moisture.
Stir Fry with 3 Tbs Oil
Add 2 Tbs Oil, Carrots, Onions, and Bell Peppers. Fry till soft plus 5 min.
Add Tomato and Garlic, than simmer 7 min.
Serve warm or cold, chunky or pureed.
