Chickpea Curry

Ingredients

  • 1 Tbs Olive Oil
  • 1.5 C Onion chopped
  • 1 C Carrot Sliced
  • 1 Tbs Curry Powder
  • 1 tsp Brown Sugar
  • 1 tsp Ginger grated
  • 2 cloves Garlic
  • 2 tsp Chili Powder
  • 3 C Cooked Chickpeas
  • 1.5 C Potatoes cubed
  • 1 C Bell Pepper diced
  • 1 C Green Beans snapped
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • tsp Red Pepper
  • 2 C Tomato diced
  • 1 C Vegetable Broth
  • 1 C Coconut Milk

Instructions

  • Stir fry Onion and Carrot in Oil for 5 min until tender.
  • Add Curry Powder, Sugar, Ginger, Garlic and Chili. Stir and Cook 1 min.
  • Place Stir fry in Slow Cooker.
  • Stir in Chickpeas and next 8 ingredients through Broth.
  • Cook HIGH for 6 Hours
  • Add remaining ingredients and stir.
